Horchata!

My kids love this treat. Making it at home is simple and inexpensive.



Homemade Horchata!

Equipment: blender, fine cheesecloth, large rubber band, pitcher, mixing spoon


Ingredients:
  • 2 cups short grain rice
  • 1 cinnamon stick
  • 1/2 cup slivered almonds
  • 4 cups warm tap water
  • 1 tsp. lime zest
  • sugar, this is to taste but allow for one cup
Directions:
  • pulverize rice and almonds in blender until you have a fine powder.
  • pour the warm water over it and stir well.
  • add your cinnamon stick and lime zest.
  • allow to sit at least 6 hours.
  • after sitting out, blend in blender again, then strain through cheesecloth rubber banded onto top of pitcher, discarding the solids.
  • add sugar to taste. if liquid is too thick, add additional water.
  • Serve over ice.

                                                                                     

Some horchata recipes I've seen call for milk. I'm not a fan of cow's milk in it's liquid form and the traditional recipes all seem to use rice milk only.
