Challenges

This page will record my cooking challenges. 

Challenge Number One: Trash-free lunch boxes! -The aim was to completely eliminate one-time-use items in the kids lunches.


Update: The Bento Box use is in full swing and though I'm totally over taking photos at 6 am, it's been about two weeks and not a single plastic baggie, paper bag, plastic spoon or small carton of juice has been used. It's become a good set habit now and I'm happy to post it and never consider it a challenge again.

A small sampling:


                             Homemade pita, hummus and mini-spinach quiches

    Pear half transformed into a mouse (first day; despite good intentions, they weren't all so cutesy)

                     tacos with homemade tortillas, a lime slaw, queso fresco and guac

                                                         Candied cherry and lemon scone



-Coming up next: a challenge for a friend whose sweet son is allergic to, well, nearly everything. I'm challenging myself to come up with a satisfying one day menu he can eat and hopefully help her out with some fun new recipes in the process.
